VINIFICATION
Average yield per Ha: 50 hl
The grapes are harvested when perfectly ripe (1st ten days of October).
Vinification with destemming and pressing and 8-10 days’ maceration on skins.
Temperature-controlled fermentation at 28-30°C.
Ageing in steel tanks upon completion of malo-lactic fermentation

Bright ruby red colour, intense and characteristic fruity bouquet.
Savoury, generous and persistent flavour.
PAIRINGS
Tasty rice and pasta dishes, red meat cooked in a variety of ways, rabbit and hunter’s chicken. Also excellent with charcuterie.
A wine which is ideal with practically every course of a meal.
